Pulses are part of the legume family and refer to peas, beans, split-peas, chickpeas, lentils and generally all crops that are harvested for their seeds. Pulses are an excellent source of fiber, iron, folate, free of saturated fat & cholesterol, and various minerals.
The most famous pulse in Greece is the yellow-looking Santorini Fava, or split peas, with its distinct aroma and unique flavor.
