Chios Mastic Gum (PDO, PGI), locally known as Mastiha, is the name of the sap produced from the mastic tree that grows exclusively on the island Chios. Once solidified it acquires a unique and distinctive aroma, and an original flavor. It served women as a breath freshener and teeth whitener while in modern times pharmaceutical companies use it for its anti-oxidant, anti-fungal and anti-bacterial properties. Its culinary applications vary from desserts & ice-cream, to liqueurs, cheese, jams, sweet preserves etc.
